Apricot Kugel 

1 lb. medium noodles
1 ¼ sticks margarine or ¼ cup oil
6 jumbo eggs, beaten
1 tsp. salt
1 tsp. vanilla
1 cup sugar
1 cup sour cream
12 oz. cream cheese
½ box golden raisins
8 oz. apricot jam
3 T. chopped dried apricots

Topping:

Cinnamon alone or mixed with corn flake crumbs
Optional:  Place apricots (whole) on top after baking.

  1. Preheat oven 350 degrees
  2. Spray lasagna size aluminum pan with Pam.
  3. Boil noodles al dente.
  4. In separate bowl mix eggs, sugar, sour cream, raisins, apricot jam, dried chopped apricots, salt & vanilla.
  5. In another bowl, slice cream cheese into chunks.  Chunk margarine or add oil to bowl.
  6. Drain noodles & immediately add to cream cheese bowl.  Mix until cream cheese is melted.
  7. Add the first bowl’s ingredients to the noodles and mix thoroughly.
  8. Sprinkle the top, if desired, with cinnamon or fine corn flake crumbs mixed with cinnamon.
  9. Bake for 45 minutes.
  10. For freezing:  Allow cooling before freezing.  When very cold, slice.  Cover tightly with foil.

Sweet Cheese Kugel

½ lb. wide noodles (undercooked)

Mix in bowl: 

2 cups milk
1 ½ lbs. cottage cheese
3 oz. soft cream cheese
1 cup sour cream
1 tsp. vanilla
½ tsp salt
1 cup sugar

Add:  5 T. melted butter

In separate bowl:

Mix 6 eggs till frothy and add to milk mixture

Put noodles in greased 8 x 10 pan.  Pour mixture evenly over noodles. 

Sprinkle top of kugel with thin layer of corn flake crumbs and then sprinkle with cinnamon & sugar mixture.

Bake 1 hr. 15 mins. At 350 degrees.

 

Pineapple Kugel

1 lb. medium noodles
1 stick margarine
6 jumbo eggs, beaten
1 tsp. salt
1 tsp. vanilla
1 ½ cups sugar
2 cups sour cream
16 oz. Crushed pineapple, strained
½ box golden raisins

Prepare the same way as the Apricot Kugel.

 

Spinach Kugel

1 lb. fine noodles
1 stick margarine
6 jumbo eggs, beaten
2 lbs. chopped spinach, drained
3 large onions
1 ½ lbs. mushrooms sliced
½ red pepper, chopped
2 carrots, grated
salt & pepper to taste (suggestion: 3 tsp. pepper & 4 tsp. salt)
minced garlic to taste

  1. Preheat oven to 350 degrees
  2. Spray lasagna pan with Pam.
  3. Cook noodles.
  4. Sauté onions, red pepper, mushrooms, carrots & minced garlic.  Add spinach.  Mix with noodles.
  5. Check seasoning
  6. Add eggs.
  7. Bake for 1 hour.
